It is easy to get bleed resist, and bleed is the main reason to use uchigatana. Without landing bleed, the damage in general is pitiful. Having a lot of low damage hits is fine, if you can get them in. A scythe though gives you the ability to dish damage out over a larger range, even if the player uses a shield.
The choice between chaos blade and uchigatana is situational. Chaos blade cannot be buffed or infused, meaning that if you encounter an enemy in PvE that is weak to fire, you cannot simply apply a resin to the weapon. In exchange, it gives you the best possible raw damage scaling with dexterity. Uchi isn't as potent by itself, but can be more ...50% more effective strength and 5% additional damage on top of that. When you two hand weapons, you get 1.5 times effect in your strength stat. So if you have 20 strength, two handing a weapon gives you a effective 30 strength. Also, moveset. movesets change when one handing or two handing.Do not do any elemental infusions / ascensions. Keep it on normal upgrade path! +15. Do NOT ascend the uchigatana just regularly upgrade it on the normal +15 bath it gets way better dex scaling and you’ll get more use out of it. Ascending it will just be a waste of resources and time. Unless you're an archer, and need good arrows, the only thing of value that merchant sells is cheap arrows, and a key that opens a door to a pyro trainer. If you really want the Uchi, my advice would be stocking upb on arrows (999 is good), buying the key, and killing him off.
