You should be able to turn off adaptive cruise control and use regular cruise with eyesight disabled. Press the cruise control button as normal, press and hold the button that decreases distance for a couple of seconds, it should make an audible noise but 2 or 3 seconds should be sufficient. The freeze warning never stopped EyeSight from functioning with my 2021 Limited. Or anything else for that matter. If there is condensation/frost on the windshield or the lenses, that can do it.
